I didn't uninstall anything this time, merely extracted the installers to a folder using 7-zip, then altered the itunes installer with orca. Rather than changing the Launch Condition value you can right click and select "Drop Table" to remove the info. Then just install itunes and everything else from previous install will work fine. I did not install iphone 3.0 firmware using the 64 bit OS, so I can't say if that works. Based on past experience I would not recommend trying it.
